About Background
From architecture to a discipline that did not exist.
Paolo Barichella trained as an architect and an industrial designer. In 2002 he applied that training to something nobody was designing yet — the structure of food itself — and spent the following two decades building the discipline through practice, formats, classrooms and publications. This is the long version.

Timeline
Four decades, six chapters.
1985 — 2005
Formation: architecture first, taste second.
Architecture at the Politecnico di Milano from 1985 to 1990 — the structural, systemic way of thinking that would later be turned on food. In 1993 an Industrial Design degree from The International College of Arts and Sciences formalised the object-design side of the practice.
Then, deliberately, the palate: qualification as a Sommelier with AIS (Associazione Italiana Sommelier) — the full third-level diploma, awarded in Milan in April 2005 — with sensory specialisation, and technical training at CAST Alimenti in 2001, in both food technology and cooking techniques. Unusual for a designer — and the reason the later work is credible in a professional kitchen rather than only on paper.
2002
Food Design becomes a discipline.
In 2002 he sets out the argument — against considerable resistance — that food design is neither styling nor cooking, but the strategic and structural design of food systems, formats and rituals. He writes the first manifesto on the subject.
He opens his own practice in Milan to prove it in the field, working as strategic design consultant to large multinational food brands, concept creator for retail formats, exhibition curator and creative director. The two decades of work that follow are the backbone of everything after.
2006 — 2012
Teaching it, writing it, exhibiting it.
In January 2006 he is the official food designer of Team Italy at the Gelato World Cup in Rimini — the first national team to bring a designer into an international competition — and Italy takes the title. A discipline only exists once it is taught: from 2006 he lectures on the Food Experience Design master at Politecnico di Milano — Poli.Design, and does so for every edition until the move to Doha. The same year he becomes a founding associate of i Food Designer, the group of experts who established food design in Italy.
The competition work continues. At the Coupe du Monde de la Pâtisserie 2007 in Lyon he designs for two national teams at once: Switzerland, with Eliseo Tonti, and Italy, with Fabrizio Galla, Fabrizio Donatone and Angelo Di Masso, coached by Luigi Biasetto, Paolo Mannori and Rolando Beduschi — and Italy finishes third, winning the prize for Best Dessert. At the Gelato World Cup 2012 he is the designer of Team Germany, alongside Urs Regli. In chocolate, he designs the presentation of master chocolatier Carmelo Sciampagna at the World Chocolate Masters 2007 in Paris, where Italy takes third place, and later works on competitions with Silvio Bessone. Designing supports, lighting and service choreography for national teams, under competition rules and timing, is the field experience from which he later develops his own innovative gelato method, Coolella.

From 2007 he writes: columns, essays, books, and eventually his own title — founder and scientific director of Food Design Magazine (La progettazione alimentare). In parallel he serves as concept design consultant to Italy's major trade fairs, Macef and Tuttofood at Fieramilano, and in 2010 edits Picnic 2.0 with DDN — a format that travelled from the Superstudio roof garden at Milan Design Week to Macef, EIMA and the Bologna Motor Show.
In 2010 he opens Food Design Advisory & Management, the consulting arm still active today.
2013 — 2016
Institutional recognition.
The academic work deepens: from March 2014 he coordinates the master in Hospitality Design & Management — Strategies for Tourism, Food and Wine at IED Florence, and in 2015 and 2016 teaches on the Master of Food Design at SPD/IULM in Milan. He lectures at SDA Bocconi, the University of Genoa, ALMA, ISIA Florence, IED Rome and São Paulo.
In June 2016 the field's highest Italian authority signs off on the work: an Honourable Mention at the XXIV Compasso d'Oro, awarded by ADI, for Espresso al Quadrato designed for Caffè Morettino.
In May 2016 he is the official designer of Team Italy at the Bocuse d'Or Europe in Budapest, with chef Marco Acquaroli. His competition tray — steel, copper and tin, made by Mepra in just two pieces and crowned by a cloche that pays homage to Brunelleschi's dome in Florence — is awarded Best Tray of that edition.

2017 — 2021
From projects to licensable systems.
In April 2017 he founds Food Lifestyle Srl in Milan as an innovative startup, and the model changes: instead of selling consulting hours, the company licenses its own food systems to Ho.Re.Ca. and foodservice operators — Coolella, Cucina Efficace, Coffee Design Kit and Restaurant 4.0 — each as a package of manuals and procedures, semi-processed high-quality products, hardware and technology, and choreographed menus.
The same company runs Leggende Italiane, a retail food format built to generate Italian food entertainment inside showrooms and concept stores, launched in Via Dante, Milan, during Milano Food Week.
In May 2019 the format Trattoria Solidale receives the Foodservice Award — the special prize of the editorial teams of Ristorando and Retail&Food — for the quality of the work done in training and including people with disabilities while innovating product and technique.
In 2021 Ultimo Tocco — Gourmet SmartBox, designed with Mauro Olivieri, is selected for the ADI Design Index 2021, the preselection for the Compasso d'Oro. It is a food-tech project built on Paolo's own patents and trade secrets: a meal solution that takes a dish apart into three separate elements, each individually quick-frozen (IQF) and packed in a modified atmosphere (MAP), to be put back together only at the last touch.

2022 — today
Doha, and an AI-native studio.
Paolo has lived in Doha since 2021. In December 2022 the practice relocates its centre of gravity to the Gulf: Food Lifestyle Consulting QFZ LLC, licensed in the Qatar Free Zone, with Paolo as CEO and Director — design strategy advisory, food concept and format, hospitality and experience design, delocalisation support in the GCC for European food groups, supply-chain selection and new-plant design. Alongside it he co-founds Effective Cooking, a holding of Qatari and Italian companies built around food systems for hospitality.
From 2023 to 2025 he co-develops the Colosseum Restaurant format in Doha, an evolution of the Italian trattoria; from November 2024 he designs food innovation for Galbusera — Tre Marie, creating Panett.1, an innovative evolution of the iconic Milanese cake, and its rollout in the Galbusera Cafè retail channel — launched with a billboard campaign across Milan and, during Milano Design Week 2025, a series of "Let's meet Paolo Barichella, the designer of our Panett.1" sessions at the Tre Marie Bistrot Store in San Babila. Today he is Senior Food Design Advisor to Torba, supporting its concept and format evolution, new lines of innovative products and the research and development of its organic range — in particular a new generation of plant-based gelato made with organic fibres.
The move closes the Italian teaching chapter and opens a second track alongside the design one: an AI-native operating model, with a proprietary internal platform running research, projects and client delivery.

Recognition
Three awards that matter.
One from international competition, one from the design establishment, one from the foodservice industry — which is roughly the shape of the whole practice.
January 2006
Gelato World Cup — Team Italy, world champions
Coppa del Mondo della Gelateria, 2nd edition · SIGEP, Rimini · official food designer of Team Italy
Italy won by almost 300 points over France, the runner-up, among ten national teams.
It was the first time a national team brought a food designer into an international competition. Paolo Barichella designed the whole presentation set: laser-cut methacrylate supports, minimal enough to keep the pastry chefs' work at the centre, lit through fibre optics and adjustable mirrors; a sinuous "cobra" cone-holder for the team's chocolate cone filled with Passito di Pantelleria and pistachio gelato; and a new take on the gelato cup. As the press wrote at the time, this was a case of design making the difference.
Team Italy: Roberto Rinaldini, Sergio Colalucci, captain Beppo Tonon, coach Pierpaolo Magni.
June 2016
Honourable Mention — XXIV Compasso d'Oro
ADI, Associazione per il Disegno Industriale · as Food Design Advisory & Management
Designer of "Espresso al Quadrato" for Caffè Morettino.
Founded in 1954 and awarded by ADI, the Compasso d'Oro is the oldest and most authoritative industrial design award in the world; its historic collection is kept at the ADI Design Museum in Milan. An Honourable Mention places a project among the most significant Italian design of its edition — and for a coffee ritual, a food project judged by the design establishment, it remains one of the most prestigious recognitions of Paolo Barichella's career.
May 2019
Foodservice Award
Ristorando and Retail&Food · as Food Lifestyle Srl
Special prize of the editorial teams, to the food format "Trattoria Solidale", for the quality of the work done in training and including special people and in innovating product and techniques.
The systems
Three formats, licensed and running.
Each one is a package: manuals and procedures, semi-processed products, hardware, and a menu designed around them.
Academia
Sixteen years of teaching the subject.
Lecturer and visiting professor from 2006 until the move to Doha in 2022, across design schools, business schools and food-engineering faculties.
